These are custom 3D printed knobs. We're working on sharing all the enclosure and hardware related files which we'll share soon. Keep an eye on the repo for updates.
The small knobs caps are all Thonk Tall Trimmer Toppers.
No specific reason, and since the two are pin-to-pin compatible, you can just use either of them. If you want to experiment with a Pico 1 vs 2 then you can just use 2.54mm headers & sockets to connect it to the Brain Core PCB.
For the connectors between the UI and Core boards, should I use socket on the UI and headers on the Core or vice-versa?
Doesn't matter, works both ways. FWIW we used sockets on UI and headers on Core. The only one that really matters is to use sockets for the default patch connection on the UI boards so you can plug in the long pin headers of the default patch PCB.
