Options

Options define variations in your products such as "size" or "color". The "Option" is the name of the list (e.g. "size") and Option Terms are items in those lists.
The Option Terms can be used to trigger variations in price, weight, SKU code, or category.
Answer: The primary difference is that the customer can choose options, whereas a custom field lets a site administrator choose a value. The option type list is exposed to the customer on the front-end of the site whereas the custom field is generated only on the back-end to the site administrator; the customer will only see the value that the administrator has defined for the given custom field.
