Update pydantic

• More recent versions of pydantic are available.
• They announced that pydantic v2.12 now allows the removal of trailing slashes (see here: https://pydantic.dev/articles/pydantic-v2-12-release#preserve-empty-url-paths). We should upgrade pydantic to v2.12

• Bump the version of pydantic and pydantic-settings in the pyproject.toml file.
• Generate new poetry.lock file.
• Add the preserve_empty_path configuration for the AnyUrl type.
