Upgrade to Ubuntu Base 18.04 LTS.
e-SDK works on Parallella board.
No desktop environment for hdmi version. epython seems not working.
Other than these, it's almost the same as Parabuntu 2016.11.1.

If you want to resize partition to fill SD card. I think you can use Gparted, or Ubuntu Disks .(Ubuntu 18 or later)

You can install a desktop if you like, here are some popular ones:(not tested, but I guess it should work.)
sudo apt-get install xubuntu-desktop
or
sudo apt-get install lubuntu-desktop
or
sudo apt-get install kubuntu-desktop
