Separate the previous single Docker build job into two dedicated jobs—`build-ui` and `build-ansible`. Introduce a version step that sets a SemVer tag based on the GitHub run number and apply it to both images. Add signing steps for each published image and a new `release` job that creates a GitHub release on the main branch. Cleanup comments and streamline permissions and steps for clearer CI configuration.
