2025 refactor

Goals:

• A giant overhaul of the entire backend, for decreased complexity and improved testing capabilities.
• Improvements to the linker (now known as the "weights api")
• Improvements to telemetry (now completely off opentelemetry).

Tasks:

• Migrate scrapers.
• Add refresh token logic.
• Add telemetry storage logic and log viewer UI.
• Add linker management logic and linker UI.
• Add weights management logic and weights UI.
• Migrate moodle integration test.
• Migrate powerschool integration test.
• Add fuzz testing.
• Setup entrypoint.
  • Add mock data entrypoint.
• Update documentation.
