Update labels for metadata key "assay_type_differentiation"

This paper: https://www.nature.com/articles/s41586-022-05219-6 suggests to distinguish between "unguided" and "regionalized" organoids. So far we use the terms "guided" and "unguided" for "assay_type_differentiation". We should adapt this.
