go.mod changes need to be cleaned up now that the feature is released, but LGTM otherwise

What was changed
envconfig.MustLoadDefaultClientOptions()on a single sampleThis is #390 but just for one sample. This cannot be merged until temporalio/sdk-go#1849 is released but can be reviewed. The rest of the samples will come in a later PR when temporalio/cli#764 is released and the docs in this repo can be updated to show how to set the env vars or config file.
