#50 Update Featured projects

Fixes issue #50

• Updated with most recent 2025 Projects
• Fixed header sizing to match the existing live site
• Fixed animation at the top of the projects page with text "Our Projects" to have exact sizing and make it more symmetrical. Animation size is 409.14px x and y just like the live React site

Need a max size for this as it gets way too big on bigger screens:

Let's center these projects as well such that they're not skewed to the left:

• Fixed the animation and the text beside it "Our Projects" to match the live site.
• Set a max size for animation and text. Stays the same like live site for all zoom levels
• Centered projects text and images to the middle
