fix(test): Iceberg/Minio on openshift

Description

Test did not work on Openshift

• copied over the templated minio yaml from https://raw.githubusercontent.com/stackabletech/demos/refs/heads/main/stacks/_templates/minio-tls/rendered-chart.yaml
• split into setup/job steps
• removed user/group references (runAsUser: 1000 et al)
