This change implements the dotfiles backup logic as requested. It introduces a new installation stage install/backup-dotfiles.sh which identifies existing dotfiles that would be overwritten by the installer and moves them to a timestamped backup directory (e.g., ~/dotfiles_backup/YYYYMMDD_HHMMSS). This ensures that user's existing configuration is preserved before the new dotfiles are symlinked. The new stage is integrated into install.sh execution pipeline.

PR created automatically by Jules for task 17125909877908087309 started by @southpawriter02

- Created `install/backup-dotfiles.sh` to perform bulk backup of existing dotfiles before installation.
- Added logic to move critical dotfiles (.zshrc, .gitconfig, etc.) to a timestamped backup directory.
- Registered the backup stage in `install.sh` to run before dotfiles deployment.
- Ensured DRY_RUN_MODE is respected.
