Add support for eks 1.18, 1.19 and 1.20

Added AMIs for EKS 1.18, 1.19 and 1.20

I didn't have access to 3 regions however (eu-south-1, and cn-*), would anyone be able to help populate these?

The following script was used to automate the retrieval:
