This PR adds support for customizing the pinentry binary path through an environment variable
PINENTRY_PATH.Similar to the issue reported in psanford/tpm-fido#29, this allows users to specify which pinentry implementation to use when the automatic detection doesn't select the preferred one.
Also added documentation in the README about this feature in a new "Known Issues" section.
Tested successfully on Arch Linux with KDE environment.
