Added using openssh on windows

per reviewer comments:
- order recommended methods
- remove 'legacy' wording
- clarify windows versions supporting OpenSSH
fixes:
- issues with windows filepaths
- ssh-keygen does not like backward slashes
- command prompt mentions removed: syntax of variables is different
- if the user account is not admin, running Powershell as admin will
  have $HOME or $env:USERPROFILE pointing to a different location;
  so changed to explicit path with <user> placeholder
