Rename repo to openmc2dolfinx

With this change, the repository has been renamed to openmc2dolfinx as the primary purpose of this repo is to convert OpenMC results files to dolfinx rather than .vtk files in general. Furthermore, as OpenMC evolves, if it moves beyond vtk or chooses alternative ways to export data, this repository will change to adopt it.
