Fix model endpoint configuration and update Docker Compose

I updated the existing Python app / docker-compose.yml, which were previously outdated and caused the application to fail at runtime.

• The old docker-compose.yml did not correctly configure or forward the model endpoint and model name to the application.
• Updated the Compose configuration to ensure the model service is correctly defined and its endpoint is passed through environment variables.
