This change allows users to use spaces in binder names, which will be stored with underscores on the backend and displayed with spaces in the UI. I've implemented the backend changes, added a display helper, and updated the repository header and settings page. I've also added unit tests to verify the backend changes. The user has indicated that they will handle updating the rest of the templates.

PR created automatically by Jules for task 1716389998196650578 started by @davidgraymi

This change allows users to use spaces in binder names. The backend will
store the names with underscores, and the frontend will display them with
spaces.

This change:
- Modifies the repository creation and renaming functions to replace
  spaces with underscores.
- Adds a template helper to convert underscores to spaces for display.
- Updates the repository header and settings page to use the new
  display helper.
- Adds unit tests to verify the backend changes.
