Update all Dockerfiles and compose configurations from 15.5.0 to 15.5.1.
Also add a 300000ms timeout for Ollama LLM API in the Ollama compose config.

Add comprehensive Docker support for Fess 15.3.0 with three platform variants:
- Alpine-based (default): Minimal footprint using eclipse-temurin:21-jre-alpine
- Ubuntu Noble (24.04): Using eclipse-temurin:21-jre-noble for broader compatibility
- Amazon Linux 2023: RPM-based installation for enterprise environments

Update all Docker Compose configurations across standard, multi-instance,
snapshot, and vanilla setups to reference Fess 15.3.0 and updated plugin versions.

Key improvements in Dockerfiles:
- Optimized multi-layer builds to reduce image size
- Enhanced logging configuration for better container monitoring
- Improved security with dedicated fess user (uid/gid 1001)
- Flexible plugin installation via FESS_PLUGINS environment variable
- Support for custom configuration overrides via /opt/fess

Changes:
- Add fess/15.3/Dockerfile and run.sh (Alpine-based)
