In my opinion org(mode) is the superior file format in this case as it can export to a number of formats including markdown, rst, odt and PDF.
If this is desired/ acceptable for others I'd like to investigate how git hooks or GH actions can be used so that from the README.org a variety of other formats get rendered on the fly on each change.
Otherwise I can convert to markdown and create another PR.
