My only concern is we are testing with CouchDB 3.5.1 instead of main branch.

main can be unstable and I did not want to risk breaking our builds out of the blue just because somebody in CouchDB introduced a problematic change. Let us stick to latest CouchDB release for the time being, and we will see if this will hide real problems from us.
