This PR removes macOS x86_64 architecture support from the project's build configuration in response to upstream dependencies (specifically llvmlite) dropping support for this architecture.
- Removes the explicit macOS architecture configuration section from cibuildwheel settings
- macOS builds will now default to native architecture (arm64 on macos-15 runners)

Since upstream packages are removing support for macos x86_64 (in this case it's llvmlite), I think it's time to remove that architecture.
