fix: remove broken links and excessive content

Description

1. The quick links on the chain overviews page is AI slop that ended up all being broken links. We don't need it
2. The Mythos chain was added to nodes tab instead of chains tab
3. The custom webhooks page has an enormous webhooks example that seems totally unnecessary. It's breaking Algolia uploads since it exceeds 100kb. It's apparently been there since at least the Readme days.

Luckily that's the last of the oversize pages. All the rest are well within the 100KB limit:
