Use keripy 1.2.6, correct shutdown handler, bump to 1.0.0, and add logging

Adds:

• keripy 1.2.6
• bumps version to 1.0.0
• removes dependency on Doist from the GracefulShutdownHandler and instead properly raises a KeyboardInterrupt
• adds log formatting like the other WebOfTrust repos and the --loglevel arg defaulting to INFO.
• also removes the explicit setuptools dependency from the setup_requires stanza of setup.py since it was causing CI problems. setup.py installs it automatically anyway and that's good enough.
