Bumps testcontainers from 4.7.0 to 9.1.1.
I needed support for TESTCONTAINERS_DOCKER_SOCKET_OVERRIDE for some CI Docker-in-Docker shenanigans and testcontainers 4.7.0 just didn't have it.
All other updates are to address breaking changes testcontainers has made in the five major versions since 4.
