[Ci] Use --strict to build docs #524

Currently, some parts of the docs are not build correctly. We didn't notice because the build of the docs does not cause the CI/CD pipeline to fail. This should be addressed by adding the --strict option.
Fixes the build error.

Griffe does not support writing union types as X | Y
