Implement Mock Gyro & Accelerometer for Testing

Description

This PR implements a "Mock Wearable" feature that allows developers to simulate an OpenEarable device using the phone's internal sensors (Gyroscope and Accelerometer). This is useful for testing features like the Posture Tracker or sensor graphs without needing physical hardware.

Changes

Mock Wearable Implementation

• Created a MockWearable class that implements the standard Wearable, SensorManager, and SensorConfigurationManager interfaces.
• Added MockGyroSensor and MockAccelerometer which map the phone's sensor data (via sensors_plus) to the OpenEarable sensor format.
• Implemented mock sensor configuration to support streaming requirements for apps like the Posture Tracker.

UI Updates

• Added a "Simulate Device" button to the "Connect Devices" screen, allowing quick access to the mock device without scanning.

Dependencies

• Added sensors_plus package for accessing device sensors.

Verification

• Manual Testing:
  • Launch app on a physical device.
  • Select "Simulate Device" in the connection screen.
  • Verify "Mock Device" appears and status updates.
  • Tested "Sensors" tab: Gyroscope and Accelerometer graphs react to phone movement.
  • Tested "Apps" -> "Posture Tracker": The 3D head model correctly mirrors the phone's orientation.

Fantastic contribution, why don't we just define it as phone? Would be nice to be able to connect to the phone's sensor via the OpenWearable app anyways.
