fix: rename paths with invalid Windows characters (pipe to hyphen)

Description

What does this PR do?

Renames folder and file names containing the pipe character (|) to use a hyphen (-) instead, enabling Windows users to clone the repository.

Problem

Windows file systems reserve the | character. The following paths prevent Windows users from cloning:

old-versions/V0.2/6-Operation/6-1-Runtime|Continuous-test/  (folder)
old-versions/V0.2/6-Operation/6-5-VDP|Bug-bounty.md         (file)

Error on Windows:

error: invalid path 'old-versions/V0.2/6-Operation/6-1-Runtime|Continuous-test/...'
error: invalid path 'old-versions/V0.2/6-Operation/6-5-VDP|Bug-bounty.md'
