Rename root package.json for less confusion when deploying the monorepo.

Note

Renames the root workspace package to a scoped name and updates lockfile references accordingly.

• Changes root package.json name from root to @metamask/snaps-monorepo
• Updates yarn.lock entries to reflect the new workspace locator and removes the old root@workspace:. stanza
