- Eigen is no longer required since we fetch it directly with FetchContent. - fftw3 was failing to compile with -mavx for x64, so explicitly invoke the x64 version of clang using the -arch flag.

Some fixes for the macOS packaging script. This fixes:
-mavxflag.Also removes the step for Eigen as we're now using CMake's FetchContent for that.
