feat: allow exluding paths from tarball

Description

Allows excluding directories or submodules from the tarball that is sent to copr. The goal is to fix the issue that was created by switching to master branch of build-deps in Sunshine repo, which is that AMF includes FFmpeg binaries directly in their git repo. Additionally, submodules will be initialized with a depth of 1.
