This PR updates Clickhouse-cpp to its latest available version 2.5.1, borrowing heavily from #88
Here we have replaced the bundled copy of the clickhouse-cpp with a submodule pointing to the v2.5.1 tag.
If this is not found to be desirable, I will happily restore the bundled copy, and update it to match the 2.5.1 release.
