Refactor documentation site to default to Simplified Chinese

Refactored the documentation site to make Simplified Chinese (zh-CN) the default language.

• Moved English content to apps/cliq-doc/src/content/docs/en/.
• Moved Simplified Chinese content to the root of apps/cliq-doc/src/content/docs/.
• Updated apps/cliq-doc/astro.config.mjs to set root locale to zh-CN and en locale to en.
• Updated sidebar translations in astro.config.mjs.
