This PR implements selective column fetching across the backend's primary summary and report endpoints to reduce ORM overhead and data transfer.

💡 What:
- Enhanced `get_latest_assessments` in `backend/db/database.py` to support an optional `columns` parameter.
- Optimized `get_compliance_dashboard` and `calculate_sprs_score` in `backend/routers/assessment.py` to fetch only required fields.
- Optimized `generate_ssp`, `generate_poam`, and `get_dashboard` in `backend/routers/reports.py` with selective fetching, ensuring all required fields for logic and reporting (including large text fields where necessary) are preserved.

🎯 Why:
Loading full ORM objects with large `description` and `notes` fields is expensive for summary views. By projecting only the needed columns, we significantly reduce execution time and memory usage.

📊 Impact:
- ~35% improvement in `get_compliance_dashboard` response time (from 0.0162s to 0.0104s in benchmarks).
- Measurable efficiency gains for all bulk assessment retrieval patterns.

🔬 Measurement:
- Verified via `benchmark_bolt.py` on a dataset of 200 controls and 10,000 assessments.
- Full test suite passed via `pytest`.
