add additional assertions to check nullifier data

there are places in the client_rpc_test_fixtures with the following TODO:
// TODO: fix detailed tx summaries in zingolib

this should be replaced with assertions that are not available to the tx summaries such as nullifier data. this is easiest to implement by asserting the wallet data itself now zingo2 has simplified this significantly
