Allow use of symbolic link for `site_dir`

Description

Some users deliberately point the site_dir setting to a symbolic link, which Zensical currently does not support. In MkDocs, this seems to be undocumented behavior. Supporting this use case might make orchestration of multiple builds simpler, at least at the current time when subproject support isn't there yet.
