Nix the e2e

we want contributors to only have a nix command to run to start emulators and run the e2e.
Without dockers and fully reproducible.

That's reasonable. I am a Guix user so I don't know if I'll be able to do this one quickly.

Running emulators on different systems will require to package a lot of unfree code. Nix has better support for it.
We use guix for the reproducible build of liana for linux systems, inspired by the bitcoind one.
