Swap from Bitnami Legacy Images for Valkey #114

As part of Bitnami's rugpull on container images, we have had to start using bitnami legacy images for valkey upstream images.
While are currently alternative container images, we run into the issue of the Bitnami helm chart, where it is running several startup script processes, that are required by the running container image.
There is currently a valkey helm chart being created, that may be possible to swap to one day. It currently does not support sentinel.
