API versioning

To go along with our theme of "best practices", we should introduce api versioning to our endpoints. Two things have to happen:

1 change the file structure:
file structure before:
-> routes
--> endpoints

file structure after:
-> routes
--> v1
---> endpoints

2 add api version after /api
endpoint before:
https://ubcea-lounge.ca/api/activity/all/get-active-pcs

endpoint after:
https://ubcea-lounge.ca/api/v1/activity/all/get-active-pcs
