[Server] separate user data dir from the server

For self-hosted servers aiming to be played by multiple people, it would make it a lot easier to be able to store the user data in a separate location, making backups and data management much easier.

Version 7.6.1, Linux debian / nixos

From what i see, this code section could allow a directory prefix for which directory it searches, which would be an optional flag in CLI or an environment variable.

Unless the feature already exists?

Such a feature does not currently exist, no.
You can always just make a symlink however
