How can i do multiple text highlight?

How can i do multiple text highlight?
Ex: one text color hightlight and another one is text bold.

I'm not sure if I understand what you exactly mean.
But, probably you want to provide styles of highlightable letters and non-highlightable letters right?
If so, you can provide them like:

 defaultStyle: TextStyle(
    fontSize: 25,
    color: Colors.black,
    fontWeight: FontWeight.bold,
  ),
  highlightStyle: TextStyle(
    fontSize: 25,
    letterSpacing: 2.5,
    color: Colors.white,
    backgroundColor: Colors.blue,
    fontWeight: FontWeight.bold,
  ),
