use PTB for sounds instead of sounddevice

Psychopy recommend using PTB for sounds now and don't even install sounddevice anymore in their pre-packaged install.

For now we just have psychopy-sounddevice in our dependencies, but this package doesn't appear to be maintained and locally I now get an error when I try to run vstt.

We should also switch to using PTB for sounds.

I tried this locally and on linux PTB seems to a bit complicated - psychopy picks the first device rather than the system default, and even when I told it which device to use it crashed with an error "Number of columns of audio data matrix doesn't match number of output channels of selected audio device" presumably because it was a 6 channel audio device while psychopy assumed stereo?

Should check if PTB works on windows, but in the meantime we continue to use the default sounddevice backend and audio errors are now logged instead of causing the task to abort.
