Less hacky way of integrating Jupyter Lite

Currently, anytime a Jupyter Lite upgrade is made, code has to be changed to adapt to changing internal Jupyter details. Instead, we should create a configuration or extension for Jupyter Lite: https://jupyterlite.readthedocs.io/en/stable/quickstart/configure.html
