separating documentation from .Rmd

might be worth putting the documentation in a /docs folder so we know where to look? Easiest way to auto-do this is to use rmarkdown::render() in an R 'makefile'-like script to build the .Rmd & save the output in a specific folder.

So I write a .R file that has something like
rmarkdown::render(X.rmd, output_dir = N:/R/observatoryData/documentation/)
and just run that rather than knitting?
