Default product image sometimes causes an error on saving SiteConfig

To replicate:

- Visit `SiteConfig` in the admin.
- Under Shop > Catalogue remove the Default Image (if any is set).
- Save

This generates (in some cases) a nested error. It appears the `SiteConfigExtension` is having some issues copying the default image and then attaching it.
