Proposal: add a Shelby MCP server example / integration example

Hi Shelby team,

I built shelby-mcp, a local-first MCP server for Shelby focused on AI agent and developer-tooling workflows.

Current scope:

• local-first STDIO MCP server
• sandboxed file access with safe path scoping
• mock provider for local development
• experimental real provider path
• Cursor integration
• VS Code MCP configuration support
• resources and prompts for better agent UX

I’m opening this issue first instead of sending a direct PR because I want to confirm the best upstream path.

My question:
Would this fit best as an example/integration inside shelby/examples?

If yes, I can adapt the project structure to match the repo’s example-app layout and keep the scope focused on a clear Shelby MCP integration example.

Happy to restructure naming, packaging, and docs to match Shelby standards if this is something you’d be open to accepting.
