docs: monitoring

Write the monitoring documentation for sasso: https://github.com/samuelemusiani/sasso/wiki/Monitoring

This should include how to integrate sasso with prometheus, which metrics are exported, how to interpret them and how to look at them with Grafana (maybe export our current dashboard?).

We should also mention loki (related to #97)
