Docs: Bump documentation theme to v7 #665
Description
v7 of the theme satisfies the company-wide requirement for cookie consent to be added to all posit domains/subdomains.
CC will be managed by GTM (WebOps).

The theme replaces the old google analytics code with a new script that allows WebOps to assume ownership.
