Customizable logging

Some organizations run the repo with Docker whereas others use a fairly standard PHP hosting. The latter doesn't save the logs correctly and has to change the monolog yamls in the config directory.

Either organizations should all use this with a decent deployment or we should make the log method easy to configure.
