🧭 Umbrella: align .gitmodules on dev by default

### Description
Rix modules are now developed on the `dev` branch.  
The umbrella repository must explicitly reflect this choice.

### Acceptance Criteria
- [ ] All submodules use `branch = dev`  
- [ ] `git submodule update --remote` works correctly  
- [ ] The README mentions this default behavior
