Could you please let me know the dimensions of the quadrilateral plate used in the demo for this repository? Do we need to specify these dimensions somewhere in the configuration file or anywhere else as input parameters?

No need. We don't calibrate the camera intrinsic paramerter, just use the plate to get straight edge to get correspondence in pointcloud and image.
But due to the limited resolution of LiDAR, large plate is better.
